Butter made the way your grandmother made it

Before creameries and centrifuges, butter was a by-product of cultured dairy. You hand-churned cultured cream until the fat separated from buttermilk. The result was tangy, fragrant, living butter — full of vitamin K2, CLA, and the buttermilk probiotics that made it digestible even for people with lactose sensitivity.

That’s still how we make Ragha’s butter. Our Madurai farm-fresh A2 milk is cultured overnight, hand-churned, washed in cold water, and pressed into blocks. No pasteurisation shortcuts, no industrial centrifuge, no colour additives, no preservatives.

  • Finish your dal and curries with a knob stirred in off-heat — adds depth and a silken mouthfeel.
  • Bake with it — cultured butter produces flakier croissants, shortbreads, and Indian mathris than regular butter.
  • Churn your own ghee — one kilo of this butter yields about 800g of Bilona-style ghee on a slow wood fire.

Why most Indian butter is mass-produced

Amul, Nandini, and the big creameries source from crossbred cattle (primarily Holstein/Jersey), pasteurise at high temperature to extend shelf life, and use centrifuge cream separation for speed. The result is a shelf-stable but flat-tasting product. Cultured butter from A2 desi cows has a completely different flavour profile — richer, more complex, and closer to French-style cultured butters like Échiré or Beurre d’Isigny.

Frequently asked questions

Why is A2 cultured butter yellow?

Grass-fed desi cows produce milk rich in beta-carotene, which ends up in the fat. The deeper the yellow, the more the cow grazed on fresh pasture rather than grain. Industrial butter is often chalky white because the cows are grain-fed.

Is A2 butter safe for lactose-sensitive people?

Cultured butter contains far less lactose than regular dairy — the culturing process consumes most of it. Many customers with mild lactose sensitivity digest this butter without issues. Severe intolerance: consult your doctor.

Why is this more expensive than Amul butter?

Amul butter costs roughly ₹260/500g because it’s industrially produced from crossbred cows at massive scale. Our butter costs more because native breeds yield less milk, we hand-churn small batches, and we don’t cut corners on feed, culture, or process. You are essentially paying for craft and breed, not just butter.

Can I use this instead of ghee for frying?

For low-heat cooking yes (gentle sautés, finishing dals). For high-heat frying like tadka, use our A2 ghee — its smoke point is 485°F while butter is only 350°F.

How long does it last after opening?

Wrapped tightly and kept at 0–4°C: 2 weeks. Because we use no preservatives, it doesn’t last as long as regular butter — which we consider a feature.
